Steps

  1. Rinse filter. The Chemex filter is uncommonly thick. Rinse it well with hot water, then drain.
  2. Bloom. 30g coffee, pour 60g water. A gentle swirl, then let the bubbling calm its nerves.
  3. Main pours. Pour in stages up to 510g, keeping the slurry level steady. Slow spirals, center-out.
  4. Drawdown. Let it drain; total brew about 4:30. Remove the filter, swirl the vessel, admire.

The clearest, lightest-bodied cup. Sweetness and acidity shine; body takes a back seat. Ideal for inspecting delicate light roasts.
